What is the best way to squeeze more vegetable into your diet? Any ideas? Maybe you have something in your mind? For me, besides putting lots of veggies into my morning smoothie, using cauliflower instead of grains is another great way. Especially cauliflower rice. So easy to prepare and you can use it in most recipes that call for rice or any other grain. You can stir-fry it with spices or roast it in the oven for a couple of minutes. In my kitchen it works really well 🙂
Ingredients:
- 1 head cauliflower
Directions:
- Wash and dry cauliflower thoroughly. Cut into small florets.
- Transfer them into the food processor and mix until everything is the size of rice. No worry if you don’t have a food processor. You can also grate cauliflower using the old-fashioned grater. The result will be the same 🙂
